還記得美劇《生活大爆炸》中數(shù)次提到的中餐廳P. F. Chang's嗎?
這家在美國(guó)動(dòng)不動(dòng)就排隊(duì)的中餐廳終于在上海開(kāi)設(shè)了中國(guó)第一家分店,還給自己起了個(gè)中文名字“華館”。
如果你以為“華館”的標(biāo)簽只是《生活大爆炸》同款,那就大錯(cuò)特錯(cuò)了。
早在25年前,“華館”就已經(jīng)是美國(guó)最受歡迎的高端中餐廳之一,目前在全美約有200多家店面,并在海外設(shè)有多家分店。
P. F. Chang's China Bistro is an Asian-themed US casual dining restaurant chain founded in 1993 by Paul Fleming and Philip Chiang. As of October 2017, P. F. Chang's operated 208 restaurants in the United States and over 100 in international markets under licensee agreements.
“華館中式休閑餐廳”是保羅?弗萊明和江一帆于1993年創(chuàng)立的亞洲風(fēng)味美式休閑連鎖餐廳。截至2017年10月,“華館”在美國(guó)擁有208家餐廳,在海外特許經(jīng)營(yíng)的餐廳超過(guò)100家。
“華館”在知名旅行網(wǎng)站貓途鷹上獲得4.5分好評(píng),許多美國(guó)人都是這家店的“死忠粉”。
有別于美國(guó)正統(tǒng)中餐早年間不太接地氣的印象,“華館”在美國(guó)的成功源于它采用美式烹調(diào),菜品更符合美國(guó)人的口味。
加州大學(xué)歐文分校歷史學(xué)教授陳勇(音譯,Yong Chen)表示,美國(guó)人雖然愛(ài)吃中餐,但是他們喜歡的并不是原汁原味的中餐。
“When Chinese restaurateurs started to carry their food to non-Chinese neighborhoods, they also modified it to make it more suitable to the taste of Americans. Over time, such modified dishes became a distinctive tradition itself, known as American Chinese food, which is found in areas that do not have a large Chinese community.”
“中國(guó)餐館開(kāi)始走進(jìn)非華人社區(qū)時(shí),他們會(huì)調(diào)整菜單,以迎合美國(guó)人的口味。隨著時(shí)間的推移,這種改良的菜肴自成一派,被稱為美式中餐,出現(xiàn)在沒(méi)有龐大華人社區(qū)的地方?!?/p>
酸酸甜甜的“左宗棠雞”(General Tso's Chicken)算是美式中餐的代表。幾乎任何一家美國(guó)中餐館的菜單上都有這道菜。
據(jù)說(shuō),這是美國(guó)最受歡迎的湖南菜。美國(guó)朋友是不是對(duì)湖南有什么誤解?湘菜的正確打開(kāi)方式明明是下圖這樣的。
當(dāng)這些“偽中國(guó)菜”來(lái)到“中餐大本營(yíng)”后,真的能滿足中國(guó)“吃貨”挑剔的味蕾嗎?不少網(wǎng)友對(duì)此表示懷疑:
就連外國(guó)網(wǎng)友也忍不住吐槽:
不過(guò),“華館”首席執(zhí)行官邁克爾?奧桑盧卻對(duì)中國(guó)市場(chǎng)充滿信心。他在接受CNBC采訪時(shí)表示:
“Our food is a perfect fit with the Chinese palette and the way China is headed. I think there’s a dynamic in America where they want to have their taste buds challenged a little bit and that’s how it’s been in China recently, too.”
“我們的食物與中餐風(fēng)味和中國(guó)前進(jìn)的方向完美契合。我認(rèn)為,美國(guó)人喜歡給味蕾找點(diǎn)刺激,而現(xiàn)在的中國(guó)也是這樣的?!?/p>
“Shanghai is a very cosmopolitan, big city with a great food scene. I’m very optimistic that in the not too distant future, we will look back and say, ‘Wow, that was a great move, and now we have hundreds of restaurants in China!’”
“上海是一個(gè)非常國(guó)際化的大都市,美食行業(yè)在這里大有市場(chǎng)。我相信在不遠(yuǎn)的將來(lái),我們回看現(xiàn)在時(shí)會(huì)說(shuō):‘哇,這真是明智之舉,現(xiàn)在我們?cè)谥袊?guó)已經(jīng)擁有數(shù)百家餐廳了?!?/p>
為迎合中國(guó)顧客,上?!叭A館”在營(yíng)銷(xiāo)策略上做了一些調(diào)整,以吸引更多好奇的中國(guó)“吃貨”對(duì)美式中餐一探究竟。
In China, the menu is considered to be more American-inspired than Chinese original, allowing PF Chang’s to market itself as American cuisine. It serves what Americans have basically always thought of as Chinese food.
中國(guó)人認(rèn)為,“華館”的菜單更偏向于美式中餐而非傳統(tǒng)的中餐,因此“華館”對(duì)自己的市場(chǎng)定位是美國(guó)菜。這里提供的是美國(guó)人一貫以為的中餐。

美國(guó)的“華館”標(biāo)志上寫(xiě)著“亞洲風(fēng)味”,而上海的“華館”標(biāo)志卻寫(xiě)著“美式休閑餐廳”。
這招營(yíng)銷(xiāo)手段對(duì)中國(guó)吃貨還挺奏效,不少網(wǎng)友都表示想去嘗個(gè)鮮:
雖然上?!叭A館”采用了不同的營(yíng)銷(xiāo)方式,但菜單內(nèi)容與美國(guó)“華館”幾乎一模一樣。
So far it seems, diners in Shanghai even have similar taste buds to their Western counterparts. Since opening, the top three items on the menu in Shanghai have been three of the top four dishes in the US: Chang’s chicken, lettuce wraps, and dynamite shrimp.
目前來(lái)看,上?!叭A館”的顧客和西方“華館”顧客口味似乎也差不多。自開(kāi)業(yè)以來(lái),上?!叭A館”排在前三的菜品分別是招牌雞、生菜卷和炸蝦,而這三道菜均屬于美國(guó)“華館”四大人氣菜品。
“華館”目前在國(guó)內(nèi)點(diǎn)評(píng)網(wǎng)站大眾點(diǎn)評(píng)上的評(píng)分為四星半。許多光顧過(guò)的客人反饋,這里服務(wù)周道,環(huán)境好,味道不錯(cuò)。
但也有網(wǎng)友評(píng)價(jià),菜品味道一般,嘗個(gè)新鮮就好。
